This salad is amazing! At first I thought it sounded a little odd, but I love it! There is a satisfying crunch to it, and it is super healthy! My favorite ingredient is the pickles! You could toss a few scoops on salad greens with a vinaigrette dressing for a full meal!
2 beets, 2 carrots, one potato - boiled, cooled, chopped 1/4 medium onion, finely chopped 1 clove garlic, minced 1/4-1/3 cup chopped parsley dill pickles, chopped, gives acidity, so add as much or as little as you want (I add at least 5 of the medium size pickles) 1 can dark red kidney beans, drained and rinsed 2 tbsp olive oil salt and pepper to taste Mix, let stand for flavors to mix, enjoy.
